Melt 1 stick butter and 1 cup packed brown sugar in a 10 inch cast iron skillet, cook until sugar melted, about 2 to 3 minutes. Lay 1 Pillsbury pie crust on top. Peel and slice thick up to 6 to 7 cups of apples. Add sugar and cinnamon to apples. Mix well and put on top of pie crust. Add another pie crust on top. No need to try and crimp bottom to top. Brush top of crust with an egg white and sprinkle with sugar. Bake 50-60 minutes at 350 degrees until very crusty and bubbly.
