Aunt Bertha's Fried Rice

Aunt Bertha's Fried Rice

Ingredients
1
lb of white long-grain rice
3
onions
2
eggs
1
tsp sugar
1
small packet of soy sauce
1
lb of chopped chicken, veal or beef
Directions
1.
Cook rice
2.
Slice onions thin from pole to root
3.
Stew sliced onion in 4 tablespoons of oil until brown
4.
Add meat and cook until browned
5.
Turn off heat and add 2 beaten eggs, sugar, soy sauce and mix all together
6.
Add mixture to rice and mix to combine all
7.
Pour into baking dish and bake at 350 degrees F for 45 minutes
8.
Can put into freezer container; Take out at least one day before and bake for 1 hr in oven
