Absolutely Amazing Egg Rolls

My mom used to make these when I was a kid and I still think they are the best thing ever. I'm not gonna lie this is a time consuming meal. It is defiantly not a quick meal however it is worth it.

Ingredients

-lb chicken breast cut into cubes

tbsp corn starch

tbsp soy sauce
1
tsp ginger
marinate for 15 minutes
1
head cabbage
1
bunch of green onions
1
tsp salt
3
teapoons sugar
carrots - as much as desired. (i don't use a lot of carrots because i'm not a carrot fan but mother uses a lot. she likes to add the color in the egg rolls. so it's just a preference thing

vegetable oil for frying
Directions
1.
In wok heat 4 tablespoons oil and cook the marinated chicken until done. Remove from pan.
2.
In the same wok, now add all the vegetables, salt and sugar and cook in oil until tender. Can add more oil if needed. Add chicken back to mixture and remove from wok.

Clean wok and add oil for frying. Take egg roll wrappers and fill with mixture and fry. When making the egg rolls, put a few drops of water around the edges to seal it off.
4.
Drain on paper towels. Now they are almost complete. But homemade sweet and sour sauce tops this off.
