Grilled Veggie Sandwich

Wonderful sandwich for vegetarians or if you just want to eat a little healthier.

Ingredients
3
cups grilled veggies
2
tbsp balsamic vinegar
1/4
cup olive oil
salt and pepper to taste
3/4
cup chevre (goat)
1
tbsp pesto
1
loaf chiabbata bread
1
cup mixed greens
Directions
1.
Put vinegar, oil, salt & pepper in zip-lock bag. Shake to mix. Add veggies and toss to coat.
2.
In bowl, mix Chevre, pesto, and lemon zest. Slice bread longs ways all the way through. On bottom spread Chevre mix and place veggies on top. Drizzle with extra vinaigrette. Top wit mixed greens and cut into smaller sandwiches
