Shrimp Scampi

Perfect for a light summer pasta

Ingredients

oz linguine
2
tbsp unsalted butter
1
lb medium shrimp, peeled and deveined
3
cloves garlic, minced
1/2
tsp red pepper flakes, or more to taste
1/4
cup white wine
1/4
cup freshly squeezed lemon juice
salt
pepper
zest of 1 lemon
1/4
cup freshly grated Parmesan
Directions
1.
In a large pot of boiling salted water, cook pasta according to package instructions. Drain well.

Melt butter in a large sillet over medium high heat. Add shrimp, garlic, and red pepper falkes. Cook, stirring occasionally, until pink, about 2-3 minutes. Stir in wine and lemon juice; season with salt and pepper, to taste. Bring to a simmer; remove from heat and stir in pasta and lemon zest.
3.
Serve immediately and garnish weith Parmesan.
