Caesar Potato Salad

Ingredients

red potatoes, skin on, quartered

slices bacon, cooked until crispy, crushed

ozs freshly shaved parmesan

croutons

tbsp freshly chopped parsley
Cesar dressing

egg yellow

tbsp Dijon mustard
3
garlic cloves
1 3/4
ozs anchovy filets
1
tbsp capers
1
cup olive oil
1/4
cup white wine vinegar
Salt and pepper
Directions
1.
In a large pot, boil water and cook the potatoes until they are still a bit crunchy.
2.
While the potatoes are cooking, make the vinaigrette. Combine the first five ingredients in the bowl of an electric mixture. Gradually add the oil and mix until the desired consistency is reached. Add the vinegar and mix for a few more seconds.
3.
Place the potatoes in a large bowl and add the vinaigrette, the bacon, the Parmesan, the croutons and the parsley. Mix delicately.
