Potato Latkes

Crispy and delicious potato pancakes. I love eating these Jewish pancakes with a dollop of applesauce on top.

Ingredients

medium potatoes, peeled
1
medium onion
1
/2 ea. lemon, juiced
1
cup flour
1
cup milk
1
egg
1
tbsp baking powder
1
pinch Nutmeg, freshly grated
1/8
cup melted butter
Optional Garnish
1
tbsp Caviar
1
/2 c. Apple sauce
1
/2 c. Creme fraiche
Directions
1.
Grate potatoes and onions on a large hole grater. Splash with lemon juice and squeeze out excess water
2.
Mix flour, milk, egg, baking, powder, and nutmeg. Add to potato mixture. Mix in with melted butter.
3.
Heat frying oil in a skillet and fry until golden on one side (1-2 minutes) over medium-high heat. Flip, and cook the same way on the other.
4.
Serve with caviar, applesauce or creme fraiche
