Sweet Potato Hash With Fried Eggs

Ingredients
For the hash:

large yam
1
big pinch of kosher salt
several turns of freshly ground black pepper
1
few shakes of garlic powder
1
couple of dashes of onion powder
1
sprinkle of dried herbs
2
tbsp of butter
For the eggs:
4
large eggs (2 per serving
1
tbsp butter
kosher salt
freshly ground black pepper
Directions

Peel and cut sweet potatoes lengthwise to fit into the feeding tube of your food processor (you can also grate by hand). Shred the sweet potatoes using the julienne slicer blade. Transfer to a large bowl and toss with salt, pepper, garlic and onion powers, and dried herbs.

Heat butter in large cast iron skillet over medium heat. When the oil is shimmering, add the seasoned sweet potatoes. Toss everything in the butter and stir-fry for a minute. Cover and cook a few more minutes. The hash is ready when there’s some crunchy brown bits and texture is soft.
3.
Place into 2 dishes and top with 2 sunny-side-up eggs.
