Steff"S Tiropita

This is on my the family favorites! I either make them in an 8X12 pan or as "triangles".

Ingredients
1
lb Feta Cheese, crumbled
5
eggs, beaten
1/2
cup Ricotta cheese
4
ozs cream cheese, room temperature
1
stick of melted butter
1
lb of Apollo Filo Dough, room temperature. Cut filo sheets into 3 strips
Directions
1.
In a large mixing bowl, add all cheeses to beaten eggs. Melt butter in small saucepan. Cut filo sheets into 3 strips (use 1/3 filo at a time; cover remaining filo so it does not dry out). I stack strips on top of each other for ease. Preheat oven to 350 degreed. Butter bottom of strip. Add a heaping teaspoon of cheese mixture to the bottom of the strip. QUICKLY, fold into triangle, stopping 1/2 way up to butter whole. Continue folding until done. Butter whole and place on non-stick aluminum foil in a large baking. Place Tiropita side by side. Bake at 350 for about 15 minutes or until lightly brown. Enjoy!
