Cream Of Asparagus Soup

A meal in itself, one bowl of this hearty soup will have you full before you know it!

Ingredients
2
leeks, diced

tbsp of butter
4
cups chicken broth
2
medium potatoes, peeled and diced
1/2
tsp of salt
1/2
tsp of pepper
20
spears of asparagus, chopped into 2in segments
1/2
cup of heavy cream
Directions
1.
Trim roots and leaves from the leeks leave only the white and a small amount of the green section
2.
Saute the leek in butter in a large pot over a low-medium heat for about 10 minutes
3.
stir in chicken broth, potatoes, salt and pepper
4.
Bring to a boil, then add asparagus (make sure potatoes are soft enough to easily poke a fork through them)
5.
reduce the heat and simmer uncovered for about 10 minutes until vegetables are tender
6.
transfer soup back to a food processor or blender and process until pureed
7.
return soup to the pot and stir in the heavy cream, return to low heat for 5 minutes then serve
