Butternut Bisque

A great soup to try for Thanks Giving, the consistency is heavy and complements turkey well.

Ingredients
1
butternut squash, peeled and seeded
2
tbsp unsalted butter
1
medium onion, chopped
6
cups chicken stock
nutmeg
salt and freshly ground black pepper
Directions
1.
Cut squash into 1-inch chunks.
2.
In large pot melt the butter, then add onion and sweat on a low heat for about 10 minutes
3.
Add squash and stock.
4.
Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree
5.
Return blended squash to pot
6.
stir in salt pepper and nutmeg then serve
