Recipe for the classic dessert

Ingredients
500
ml water
250
gr butter
250
gr plain flour
1/4
tsp salt
4
eggs
750
ml cream
chocolate sauce
150
gr 70% chocolate
50
ml cream
Directions
1.
Preheat oven to 200 C.
2.
Add butter and water to a medium saucepan and bring to the boil until the butter is melted.
3.
Add flour and salt all at once and beat until the mixture forms a large ball. Allow to cool.
4.
Add in beaten eggs one at a time and beat until mixture is glossy.
5.
Pipe mixture into small balls on lined baking sheet. Bake for 25-30 minutes until golden brown.
6.
Allow the pastries to cool on a wire rack and then spilt open. If the insides are slightly soggy, remove. This will help keep the pastry crisp.
7.
Whisk cream in a large bowl and fill each each pastry.
8.
Melt chocolate and stir in cream. This will create a glossy chocolate sauce.
9.
Pour over the cream filled pastries and serve.
