Hope's Lemon Pie

Ingredients
1 1/3
cups sugar
6
tbsp cornstarch
dash of salt
1 1/4
cups c boiling water
3
eggs separated
1/3
cup lemon juice
2
tbsp margarine
2
tsp lemon rind
1
9 inch baked pastry shell
1
(7 oz) jar marshmellow creme
Directions
1.
Combine sugar, cornstarch, and pinch of salt in saucepan
2.
Gradually add water; bring to boil stiring constantly
3.
Cook 1 minute or until mixture is clear and thickened
4.
stir small amount of hot mixture into beaten egg yolks
5.
return to hot mixture andcook over medium heat 3 minute stiring constantly
6.
Stir in lemon juice margarine and lemon rind
7.
Pour into pastry shell
8.
Beat egg whites and salt until soft peaks form
9.
Gradually add marshmellow creme beating until stiff peaks form
10.
Spread over filing
11.
Bake at 350 12-15 minutes until light brown
