Louisiana Style Red Beans & Rice

Growing up in Mississippi, Red Beans & Rice was something you just knew how to cook. My Grandfather frequented New Orleans and learned form the best.

Serves 12people
Ingredients
6
cups water
1
lb dried red kidney beans
2
lb ham hock
1
cup chopped green onions including tops
3/4
cup chopped cooking onions
1
tsp finely sliced garlic
4
tbsp butter
1
tsp salt
1
dash pepper to taste
Directions
1.
Bring beans to boil, then boil briskly for 2 minutes.
2.
Set beans aside to soak for 2 hours.
3.
Saute cooking onions, garlic, and 1/2 green onions in butter.
4.
Drain beans, saving the 4 cups liquid (if necessary add more water to make 4 cups).
5.
Add all to beans then bring to boil.
6.
Reduce heat to simmer and cook partially covered for 2 and 1/2 hours.
7.
Serve over rice and sprinkle green onions on top with hot sauce if desired.
