"Better Than Beef " Soft Tacos

We love soft tacos but we wanted to cut out more red meat in our diet. Once we tried these we will NEVER go back. They are easy to make and have a lot of flavor. Beginner friendly. Kid approved.

Ingredients
AKA BLACK BEAN & BUTTERNUT SQUASH BURRITOS from (ohsheglows.com)

medium butternut squash, peeled, cubed & roasted (or use 1.5 - 2 cups of costco pre-cubed squash
1/2
cup uncooked short grain brown rice (or any rice you have on hand yielding 1.5 cups

olive oil
1
cup chopped sweet white onion
2
garlic cloves, minced (we use pre-minced organic garlic sold in jar so prep is a lot easier
1
red pepper, chopped small pieces
1
tsp kosher salt ( or any salt on hand
2
ground cumin, or more to taste (definitely needed... worth buying this spice
1/4
tsp cayenne pepper, or more to taste
1
reg can of black beans, drained and rinsed (or chickpeas, or mix of beans

cup cheddar cheese
8
soft tortilla wraps or hard taco shells
toppings of choice (avocado, salsa, sour cream, spinach/lettuce, frank's hot sauce, jalapeno
Directions
1.
Preheat oven to 425F and line a large glass casserole dish with tinfoil. (Hint: Spray with Pam or coat lightly with Olive Oil. Also any pan will do that has sides, no lid needed)
2.
In a bowl add the butternut squash cubes and drizzle olive oil over them. Add salt and pepper. (do not miss salt as this keeps the flavor) Use hands to coat thoroughly and place in casserole. Roast on middle rack for about 45 minutes or until tender. (I flip once or twice in cooking process)
3.
Make sure to chop up all the ingredients first or you will have too dry a filling in the end. Have them ready to go.

While squash cooking, make the rice as per package instructions. (Make sure it is cooked well and not half cooked and still "crunchy") Put aside.
5.
In a large skillet over medium heat, add oil, onion, and minced garlic. Sautee for 5 minutes, stirring frequently. Now add in salt and seasonings and stir well. (smells delicious!)
6.
Add red pepper, beans, and cooked rice and sautee for another 10 minutes on LOW.
7.
When squash is tender remove from oven and cool slightly (2 min) Add about 2 cups of cooked squash to skillet. (Mash any pieces that are too large) Add the cheese and heat for a few minutes more until gooey!
8.
Add bean filling to tacos or burritos as if it was beef and enjoy with toppings. Leftovers can be reheated next day and used to top a salad or just eaten plain. (Yes, it is that good)
9.
HINT: ( the spice flavor reduces as you add more things so make sure you add enough in the beginning so the flavor stays until the end. If your filling seems flavorless at the end, adjust your spices next time and taste a HUGE difference.)
