Persis' Beef Curry

In memory of the day I cooked a curry at 4A. We all sat in the back garden, and you dived in with great pleasure with your fingers. You got a ticking off from Granny!

Ingredients

tbsp oil
black mustard seeds
fennel seeds
curry leaves/bay leaf
garlic (chopped)

Directions

Heat the oil; fry the onions for 2 mins. Throw in the next four ingredients. When onions are cooked, turn up the heat and add the beef. When the sides are seared, sprinkle black pepper on the meat. Add some of the tomatoes, and keep stirring. Add the spices, and when they are hot, add the rest of the tomatoes. Add ¾ pint of liquid made up with water and (coconut) milk. Simmer till beef is tender.

When the meat is cooked, add the yoghurt and salt to taste. Garnish with fresh coriander leaves and serve with white/brown rice.
