Snickerdoodles

Ingredients
2
cups all purpose flour
2
tsp cream of tartar
1
tsp baking soda
1/4
tsp salt
2
sticks unsalted butter, softened
1 3/4
cups sugar
2
large eggs
4
tsp ground cinnamon
Directions
1.
Position rack on upper third part of the oven. Preheat oven to 350 degrees. Grease cookie sheets.
2.
Sift the flour, cream of tartar, baking soda, and salt together
3.
Beat the butter and 1 1/2 c. of sugar together on medium speed until very fluffy and well blended
4.
Add the eggs and beat until well combined.
5.
Add the flour mixture to the butter mixture until well blended and smooth
6.
Pull off pieces of dough and roll them between your palms. Roll them in a mixture of the remaining 1/4 c. of sugar and the cinnamon
7.
Bake one sheet at a time until cookies are light golden brown at the edges, 8-10 minutes. Rotate sheet halfway through for even browning
