Pumpkin Lemon Soup

cups pureed pumpkin

cups low sodium organic chicken broth

can full fat coconut milk

1 1/2” grated gingerroot

tsp coconut sugar

tsp celtic sea salt

tbsp lemon juice

cup quinoa
1
cup diced celery
1
lb diced carrots
1/2
tsp red pepper flakes
1/2
tsp curry powder
1
large yellow pepper, diced
1/2
cup chopped cilantro
1
tbsp olive oil
Directions

Heat Olive oil in dutch oven. Add carrots, celery, yellow pepper and red pepper

flakes, curry and quinoa. Saute for 2-3 mins. Add 1 cup chicken broth, cover and

simmer for 15 mins. Add pumpkin, remaining chicken broth, coconut milk,

gingerroot, salt and sugar. Puree briefly with immersion blender. Allow it to stay

somewhat chunky. Add cilantro and serve.
