Philly Cheese Steak Stuffed Pepper

Ingredients

oz thinly sliced roast beef
8
slices provolone
2
large bell peppers
1
medium sweet onion
6
oz baby bella mushrooms
2
tbsp butter
2
tbsp olive oil
1
tbsp minced garlic
salt & pepper
Directions
1.
Preheat oven to 400 degrees. Slice the peppers in half and remove ribs and seeds. Add butter, olive oil, garlic, mushrooms, onion, salt, and pepper to a large saute pan and cook over low-medium heat. Cook for about 30 minutes. Slice roast beef into thin strips and add to pan. Cook for 3-5 minutes. Line inside of each pepper with cheese and fill with mixture and top with cheese. Bake for 15-20 minutes until the cheese on top is golden brown.
