Apple Pie

The best apple pie!

Ingredients
crust
2 1/2
cups flour
1
tsp sugar
1/2
tsp salt
16
tbsp cold butter
3
tbsp sour cream
1/2
cup cold water
filling
5
lb Granny Smith and Golden Delicious apples slice
1/2
cup sugar
1/4
cup brown sugar
1/2
tsp cinnamon
1
tsp lemon zest
1
tbsp lemon juice
1
egg white
Directions

Crust:

Combine flour, sugar, salt and butter in a food processor

Pulse until crumbly
4.
Combine sour cream and water to create a mixture
5.
Add the sour cream and water mixture to the food processor, 1/2 a cup at a time
6.
Pulse until dough is formed
7.
Pour dough out onto plastic wrap making 2 disks - an inner and an outer crust

Refrigerate for 1 hour

When dough is cold, roll out bottom crust and fit it into the bottom of a pie tin; Ensure that the crust goes over the edge of the pie tin

Filling:

Combine apple slices, sugar, brown sugar, cinnamon and lemon zest in a pot

Cook over medium heat for 15 minutes; Ensure pot is covered
13.
Stir once during cooking

Pour onto cookie sheet and cool

Scoop out all of the cool apples, leaving excess liquid behind and fill the bottom pie shell

Pour lemon juice over the top of the cool apples
17.
Cover with top crust
18.
Flute the edges
19.
Make six vents on the top of the pie
20.
Brush with egg white
21.
Sprinkle sugar on the top of the pie
22.
Bake at 350 degrees F for 60 minutes
