Green Beans W/ Sesame Miso Dressing

Best Recipes in the World p190. If miso is unavailable, you can use 1 tbsp soy sauce and 1 tbsp honey as a substitute.

Ingredients

lb green beans, trimmed & 2" pieces

tbsp sugar or honey
1
tbsp mirin, sweet sake or sweet wine
2
tbsp toasted sesame seeds
3
tbsp miso, preferably red
salt
Directions
1.
Bring a salted pot of water to a boil.
2.
Cook the green beans until just tender, about 3 minutes. Rinse under cold water or in an ice bath.
3.
Whisk sugar into mirin until it dissolves. Stir in sesame seeds and miso until well combined.
4.
Toss with green beans until well coated.
