Artichokes & Peas

Adapted from Joy of Cooking "Braised Baby Artichokes and Peas", which is a great fancier version involving "24 walnut sized artichokes".

Ingredients

tbsp evoo
1
small onion, chopped
2
cans artichoke hearts (not in oil)
2
large cloves garlic, chopped
2
cups peas
2
tbsp butter
2
tbsp stock or water
salt & pepper
2
tsp fresh lemon juice
2
tbsp shredded fresh basil
Directions
1.
In a medium, deep skillet, heat the oil.
2.
Add the onion, stirring over medium heat until brown.
3.
Drain and add the artichokes and saute over moderately high heat until they are browned all over.
4.
Stir in the garlic, peas, butter, stock or water, and salt & pepper.
5.
Bring to a simmer, cover, and cook over low heat until the artichokes and peas are tender. Occasionally shake the skillet, holding the lid. Check to see if more stock is needed toward the end.
6.
Taste for salt and pepper, then stir in lemon juice and basil. Serve immediately.
