Roasted Asparagus

Ingredients
1
lb asparagus
evoo
salt & pepper
2
tbsp minced fresh parsley, tarragon and/or chives
lemon wedges
Directions
1.
Preheat oven to 500 degrees.
2.
Snap off the bottoms of the asparagus. Arrange the spears in a single layer in a shallow baking dish and drizzle oil over them very lightly. Toss to coat lightly.
3.
Roast until tender but still slightly firm, 8-10 minutes.
4.
Sprinkle with salt, pepper, oil and herbs.
5.
Serve with lemon wedges.
