Fish Meuniere

Ingredients

lb fish (4 fillets)
salt & pepper
evoo or butter
flour or cornmeal for dredging

tbsp fresh lemon juice
2
tbsp minced fresh parsley
Directions
1.
Heat a 12" skillet over medium-high heat for 2 minutes. While heating, sprinkle fish with salt and pepper and place flour on a plate.
2.
Coat skillet with butter and increase heat to high. When hot, dredge fillet (push down to get good coverage). Add fillet to pan & repeat.
3.
Cook until nicely browned (3 minutes), then turn and cook 2-4 minutes, lowering heat if coating begins to scorch. Make brown butter if desired.
4.
Drain fish on paper towels, transfer to warm platter. Drizzle with lemon juice and top with half of the parsley. At last minute, pour brown butter all over, add remaining parsley.
