Lime Cooked Fish With Crisp Garlic

Ingredients

cup neutral oil

garlic cloves, thinly sliced
salt

lb flatfish (4-8 fillets)

small hot dried red chiles (to taste)

cup fresh lime juice
1
cup cherry tomatoes, optional
Directions
1.
Combine 2 tbsp oil with garlic in a small heavy saucepan over medium-low heat. Cook, shaking occasionally, 5-10 minutes. Season and turn off heat.

Heat 2 tbsp oil in a large nonstick skillet over medium-high heat. Add fish & chiles and cook, undisturbed, about 2 minutes.
3.
Reduce to medium, add almost all lime juice and tomatoes. Cook another 2 minutes until fish is cooked through.
4.
Transfer fish to a platter. Pour contents of pan over fish along with garlic and its oil and remaining lime juice.
