Ma Po Tofu

Ingredients

tbsp peanut oil

tbsp minced garlic

tbsp minced ginger

tsp red pepper flakes
1/2
lb ground pork
1
cup chopped scallions (green only)
1
cup stock or water
2
lb soft or silken tofu cut into 1/2" cubes
1/4
cup soy sauce
salt
Directions
1.
Put oil in deep 12" skillet, heat on medium-high. 1 minute later add garlic, ginger & red pepper flakes, and cook until they just sizzle - less than 1 minute.
2.
Add the pork and stir to break it up. Cook, stirring occasionally until it loses its pink color.
3.
Add the scallion and stir, add the stock. Cook for 1 min or so, loosening any stuck meat, then add tofu. Cook, stirring once or twice until tofu is heated through, about 2 minutes.
4.
Stir in soy sauce, taste and adjust seasonings.
