Cheese Pockets

Kase Maultaschen recipe from Neubauer family.

Ingredients

medium potatoes
Filling

dry curd cottage cheese (12oz)

egg yolk
1/2
tsp salt
1/8
tsp pepper
Dough

cups flour
1
egg, beaten
1
tsp salt
water or milk to make stiff dough
4
ozs sour cream
Cream
1/2
cup butter
1
onion, sliced
2
cups cream or half and half
Croutons
1
bread
1/2
cup butter
Directions
1.
Cube potatoes and boil. Transfer cubes to baking dish. Save water.
2.
Mix together all ingredients for filling.
3.
Knead together dough ingredients and roll out to 1/4 to 1/8 inch thickness. Cut into 4 inch squares.
4.
Place 1 Tbsp. filling in each square of dough and pinch together to make dumplings. Use sour cream to seal seams.
5.
Drop dumplings into gently boiling potato water and cook 8-10 minutes. Remove from water with slotted spoon and transfer to dish with potatoes.
6.
Brown 1/2 c. butter in pan. Add sliced onions and cream. Heat to boiling and pour over dumplings.
7.
Brown 1 slice of bread in 1/2 c. butter. Cube bread and add to dumplings.
8.
Add diced potatoes and serve.
