Coconut Curry Rice

A simple flavorful recipe that will satisfy anyone's taste buds

Ingredients

cup lentils
1/2
cup diced onion

cups brown rice, rinsed and drained

can (14 oz) unsweetened coconut milk
3 1/2
cups filtered water
1
tbsp curry powder
1
tsp sea salt
1/2
tsp ground red pepper
1/2
cup raisins
chopped spinach
Directions
1.
Combine the rice, coconut milk, water, curry powder, salt, lentils, onion and pepper in a 4 quart pot and stir well.
2.
Place over medium-high heat, cover, and bring to a boil.
3.
When rice begins to boil, turn the heat down to low and allow to simmer for 45-50 minutes
4.
When the rice is cooked through, add the raisins and vegetables and stir to incorporate, then cover and allow to sit for 10 minutes.
5.
Serve hot or cold.
