Cherry Walnut Cookies

Tante's famous cookies that no one can resist!

cup butter (10 T.)
1/4
cup organic sugar
1/3
cup organic brown sugar
1/3
cup organic raw agave nectar

organic eggs
2/3
cup unsweetened applesauce
1 1/2
vanilla
1
cup organic quick oats
1
tsp xantham gum
1
tsp salt
1 1/2
baking soda
1/4
cup ground flax
1/2
cup flaked coconut
1/3
cup almond meal
3/4
cup gluten free baking flour blend
2 1/2
cups organic gluten free rolled oats
1
cup white chocolate chips
1
cup coarsely chopped walnuts
1
cup dried cherries
1/2
cup dried cranberries
Directions
1.
Cream together the butter, sugar, brown sugar, agave nectar, eggs, applesauce and vanilla in a large bowl.
2.
Grind quick oats in a cleaned coffee grinder.
3.
Add anthem gum, salt, baking soda, flax seeds, coconut, almond meal, flour blend and rolled oats to the oats in a medium bowl; mix.
4.
Stir in the white chocolate chips, walnuts, dried cherries and dried cranberries.
5.
Scoop with ice cream scoop and press down. Bake at 350 degrees for 18 minutes.
