Gran's Chicken 'N' Dumplin's

This is the absolute, hands down, best recipe on the planet for Chicken 'n' dumplin's. My grandmother's recipe cannot be beat.

cans store-bought biscuits
2
cans chicken broth
water
flour
1
whole chicken
salt
pepper
optional- condensed chicken stock (i use knorr's)
Directions
1.
Start by preparing your whole chicken. You can also use store bought rotisserie chicken when you are in a pinch for time. In a large stock pot, bring water to a boil. Place chicken in boiling water. Boil chicken until tender (easily shredded), about 30 minutes. Remove from heat. Save 1-2 cups of the water for later use and drain pot. Let the chicken sit to cool before handling.

Once chicken is cool enough to handle, remove all meat from the chicken, shredding as you go. Place chicken in a bowl and set aside.

In the same stock pot, add 2 cans of chicken broth and 1-2 cups (depending on your taste) of the water from boiling your chicken. Bring to a boil. (This is often where I add the condensed chicken stock. It adds a ton of flavor and I am able to add some water as well to make more of the liquid portion, which means more leftovers!)

While liquid is coming to a boil, begin making your dumplings. Place about 1 cup of flour in a shallow bowl (for dredging). Open a can of biscuits and remove them all. With your hands, take one biscuit at a time and tear into 4-5 pieces. Dredge each of these pieces in the flour and place carefully in the pot of boiling liquid. Continue until all biscuits are used (or until desired amount has been made). Some additional flour may fall in the liquid as you are dropping your biscuits in, which is ok. This will help thicken the soup.

Add salt and pepper to taste. If you want your soup to be a bit thicker, sprinkle some flour into the pot. Stir well.

Dumplings are ready in about 15 total minutes. You will see the dumplings begin to sink a bit when they are done.

Add the shredded chicken to the soup. Stir and cook until chicken is reheated. Remove from heat, and serve!
