Curried Butternut Squash Soup

Ian, squash doesn't bite…at least I don't think so?

Ingredients

tbsp olive oil
greens of 1 bunch green onions
2
stalks celery, diced

(3 tsp) gluten free curry powder
4
cups butternut squash, diced
4
(6 cup) vegetable broth
sea salt
pepper
1
tbsp maple syrup
1
cup coconut milk
Directions
1.
Heat oil, sauté onion, celery, curry powder.
2.
Add broth and squash, cover and simmer. Simmer for 30 minutes. Add water if necessary.
3.
Puree soup mixture.
4.
Stir in maple syrup and coconut milk.
