Grilled Chicken Satay With Peanut Sauce With Cucumber Relish

They're great for a party-just make a double batch!

Ingredients

lb boneless, skinless chicken breast halves, cut into 16 strips (each 2" long)
1/2
tsp curry powder
1
tbsp freshly squeezed lime juice
1
tbsp canola oil
1
cucumber, peeled and cut into chunks
1/2
red bell pepper, finely chopped
1/2
red onion, finely chopped
2
tbsp rice vinegar
3
tbsp chopped unsalted peanuts
1
tbsp sugar
1
tbsp chopped fresh cilantro
1/2
cup store bought peanut sauce
Directions

Combine the chicken, curry powder, lime juice, and oil in a bowl. Refrigerate for 2 hours. Combine the cucumber, pepper, onion, vinegar, peanuts, sugar, and cilantro in a bowl. Refrigerate until ready to use.

Prepare the grill for medium-hot direct heat grilling.

Remove the chicken from the bowl and thread 2 pieces lengthwise onto each of 8 skewers. Brush lightly with the remaining marinade mixture. Set the skewers on a grill rack that has been coated with oil. Grill for 3-4 minutes per side or until cooked through. Meanwhile warm the peanut sauce in a small saucepan over medium heat for 1-2 minutes or until hot. Serve over the skewers.
