Tilapia Mango Curry

A fresh twist on a a classic piece of fish.

Ingredients

tbsp coconut oil
1
bottle patak's mango curry simmer sauce
2
3 tilapia fillets
1
mango, peeled, diced (or 1 cup frozen mango chunks cut into 1/2" pieces)
1/2
cup chopped fresh spinach
salt
pepper
Directions
1.
In large (12-inch) fry pan, melt coconut oil.

Season fish with salt and pepper and add to fry pan. Pour simmer sauce over top of fish and cover. Simmer for 10 minutes and add mango and spinach, cover. Simmer additional 2-5 minutes until spinach wilts and fish is cooked through.
3.
Serve over cilantro rice or butter lettuce.
