Confetti Salad In Orange Cucumber Dressing

You would have never known raw tastes so good!

Ingredients

head of red leaf or romaine lettuce, torn into bite-size pieces
1/2
bunch dinosaur kale, ribs removed and leaves torn into bite-size pieces

cups red cabbage, chopped
1
cup walnuts
1/2
cup cherries, dried or fresh
orange-cucmber dressing
1
small cucumber, about 5-inches ling, diced
1
medium orange, peeled, seeded, diced
1/4
cup extra-virgin olive oil
1/4
cup cashews
1
tbsp grated ginger
1
clove garlic (optional)
juice of 1 lemon, about 2 tsp
1
tsp sea salt
Directions
1.
Place lettuce, kale, cabbage and walnuts in large sale bowl.
2.
To make the dressing, place all dressing ingredients in a blender and blend until smooth.
3.
To serve, toss sale with Orange-Cucumber Dressing. Top with cherries for color.
4.
Tossed salad will deep for one day in the fridge. Salad mix will keep for 2 days, and dressage will keep 3-4 days when stored separately.
