Carrot Muffins

Just like carrot cake, only better!

cups Pamela's baking mix
1/4
cup flaxmeal
1/4
cup almond meal
1 1/4
cups grated carrot

tsp cinnamon
1/2
tsp nutmeg
1/4
tsp cloves
1/4
cup sugar
1/2
cup crushed pineapple
1/3
cup water
2
eggs
1/3
cup brown sugar
2
tbsp oil
2
tsp vanilla
Directions
1.
Mix Pamela's mix, flax meal, almond meal, carrot, cinnamon, nutmeg, cloves and sugar together.
2.
Blend crushed pineapple, water, eggs, brown sugar, oil and vanilla together. Fold into dry ingredients.
3.
Bake at 350 degrees for 18 minutes.
