Pat's Chicken Recipe
This recipe was shared by Pat Willis, former principal at Prairie College Elem. Everyone loves this recipe. It is great to take to people when they need a meal in a pinch.
bottle of italian salad dressing (tuscan italian is really good)
flour
olive oil
1
onion
3
cloves fresh garlic
mushrooms
Directions
1.
Roll chicken in flour, fry in a skillet with olive oil and a little salad dressing until browned. While browning, put salad dressing in the bottom of 9x13 baking dish. Lay browned thighs in dish. Chop onion and garlic in pan and fry it with the flour drippings left in pan and some salad dressing. Add mushrooms if desired. (I leave them out). Bake 1/2 hour at 350*. Do not substitute with white meat chicken. It is not moist or as good.
