Simple Ganache

Although you will be tempted, try to use this only for glaze, frosting or truffles, NOT as a soup.

Ingredients

cup heavy whipping cream
1
(12 oz) bag 60% cocoa ghiradelli chocolate chips
Directions
1.
Pour chocolate chips into a medium sized bowl.
2.
In a 1 qt saucepan bring cream to a low boil.
3.
Pour cream over chocolate chips and stir until smooth.
4.
Use immediately for a glaze or allow to cool and thicken to use as a piping.
5.
If you want to use as a traditional frosting, allow to cool and then whip until fluffy.
6.
Careful not to over whip
