Marmalade Rolls

Ingredients
1/2
cup milk
2
tbsp shortening
3
tbsp sugar
1/2
tsp Salt
1
cake fleischmann's yeast
1/4
cup lukewarm water
1
egg
1/2
tsp grated lemon rind
3
cups flour
butter
marmalade
Directions
1.
Scald milk, Shortening, sugar, and salt and let cool till lukewarm.

Crumble the yeast cake into the lukewarm water, mix well, then stir into the cooled milk mixture. Add a well beaten egg and lemon rind. Stir in the flour a little at a time, until you have a soft dough, use more or less then 3 cups, as the case requires.

When well mixed, turn the dough out on to a floured board and knead until smooth. Let rise for 45 minutes, then roll the dough out again into a sheet a scant quarter inch thick. Spread with softened butter and then with a thick layer of stiff marmalade -- orange, apricot, cranberry, or any other. Boil up like a jelly roll, cut down in half-inch slices, place on a greased pan and let rise again for 30 minutes.

Bake in a moderate oven for 20 minutes and serve hot.
