African Peanut Potato Stew

Super veggie with creaminess from peanut butter. Yes, creamy peanut butter, what else?

Ingredients

onion, chopped

jalapeños, seeded and finely chopped

tsp minced fresh ginger root

tsp minced fresh garlic

tsp ground cumin

tsp salt

tsp ground cinnamon

tsp crushed red pepper
1/4
tsp ground coriander

lb sweet potatoes, peeled and cut into 1" chunks
2
cans (14 oz) chopped tomatoes
2
cans (14 oz) chickpeas, drained and rinsed
1
lb green beans, cut in 1" pieces (fresh or frozen)
4
cups vegetable broth

cup natural peanut butter
Directions
1.
Place 1/3 cup water, onion, jalapeños, ginger and garlic in a large pot. Cook, stirring occasionally for 5 minutes. Add cumin, cinnamon, salt, red pepper and coriander. Cook and stir for 1 minute. Add sweet potatoes, tomatoes, chickpeas, vegetable broth, and peanut butter. Bring to a boil, reduce heat and simmer for 20 minutes, or until potatoes are just tender. Add green beans and continuing simmering until 10 additional minutes.
