Red Curry Over Rice

Did I make you too much curry? Is there such a thing as too much curry?

Ingredients

tbsp olive oil
1
large sweet onion, chopped
1
medium potato, chopped
2
large stalks of celery, chopped
1/4
cup mild curry paste
1
tsp curry powder
1/2
tsp salt
1
can diced tomatoes
1
can coconut milk
1
can chickpeas
1
can (or 2 cups frozen) green peas
Directions

Heat pan for 1 minute and then add oil to heat in large skillet. Add onion, cook on low until soft. Add celery, curry, curry paste and potato. Mix well and simmer for 5 minutes.

Drain and rinse chickpeas and green peas. Add tomatoes, chickpeas, green peas, coconut milk and salt. Simmer for additional 10-15 minutes. Serve over rice.
