Braised Eggplants With Basil

Slice the eggplants into 1/2 inch disks and mince the garlic. Prepare sauces.

Heat the oil over a medium-high heat in a large fry pan. Put in the sliced eggplants and minced garlic with a little salt. Cook, stirring occasionally, until it is a bit soft (about 2 minutes)

Pour in water, soy sauce, sugar, and chili bean sauce (cook slightly in a pan beforehand). Bring to a boil and then reduce heat into a small simmer until eggplant slices are tender (about 15 minutes)

Add in water and cornstarch and allow it to thicken.
