Chicken Satay

Ingredients
1/2
cup crunchy peanut butter
1/2
cup chicken stock

tbsp soy sauce
1/4
cup sweet chili sauce

gr packet fresh hokkien noodles
1
tbsp peanut oil

gr chicken stir-fry strips
1
large red capsicum, thinly sliced
200
gr snow peas, trimmed, halved
1
bunch bok choy, finely shredded
4
spring onions, finely sliced
Directions
1.
Combine peanut butter, stock and sauces in a small bowl; whisk until smooth.
2.
Place noodles in a large bowl; cover with boiling water. Stand noodles for 4 minutes; separate using a fork. Drain well.
3.
Heat oil in a wok or large pan; add chicken in batches, stir-frying until browned all over.
4.
Return all chicken to wok with capsicum, snow peas, bok choy, spring onions and noodles; stir-fry for 1 minute.
5.
Pour in peanut butter mixture; stir-fry until sauce boils and boodles are heated through.
