Chickpea Salad

One of my summer favourites

Ingredients

tbsp extra-virgin olive oil
fresh lemon juice of half a lemon

clove garlic, minced
1/2
tsp finely grated lemon zest
1
tsp ground cumin
salt and freshly ground pepper
1
chickpeas, drained and rinsed
1/2
cucumber, chopped in small cubes
6
large red radishes, thinly sliced
1/2
medium red onion, thinly sliced
1/4
cup finely chopped flat-leaf parsley
1
clove of garlic
8
cherry tomatoes in quarters
6
semi-sundried tomatoes
Directions
1.
In a large bowl, combine the olive oil, lemon juice, garlic, lemon zest and cumin and season with salt and pepper. Add the chickpeas and let marinate for at least 25 minutes, stirring occasionally. Just before serving, stir in the remaining ingredients and season with salt and pepper.
