Okonomiyaki (Japanese Pancake)

This popular Japanese savory pancake is a common street snack. This pancake can be topped with whatever savory ingredient you want.

Ingredients
1
cup White or whole wheat flour
3
/4 c. Dashi (kelp stock base) or water
1
ea. Egg, beaten
1
/4 c. Cabbage, shredded
1
ea. Carrot, grated
1
ea. Zuchinni, grated
1
ea. Green onion, chopped
3
ea. Slices of bacon, cooked
1
ea. Worcestershire sauce
1
ea. Japanese mayonnaise (store bought)

tbsp Vegetable oil
Directions
1.
Mix the dashi or water into the flour.
2.
Stir in egg, cabbage, carrot, zuchinni, green onion, bacon and Worcestershire sauce.
3.
In a high heated and oiled pan, ladle a 1/4 cup of batter. Make sure to spread the batter out evenly in pan. Cook for 1-2 minutes.
4.
Flip the pancake once the side has brown. Cook other side for 1 minute or until brown.
5.
Top pancake with mayonnaise, scallion and whatever ingredient you desire.
