Lentil Soup

Quick, easy, and healthy.

Ingredients

tbs olive oil
2
garlic cloves crushed
1
teasp ground cumin
1/2
tsp garam masala
1/8
tsp chilli powder
1
pkt french onion soup
1
cup water
400
g can chopped tomatoes in juice
3
tbs tomato paste
3
cup hot water
1/2
cup red lentils
1/2
tsp sugar
Directions
1.
Heat oil in large saucepan.
2.
Add garlic, cumin, garam masala and chilli powder.
3.
Cook over a low heat stirring for 1 minute.
4.
Combine soup mix and water.
5.
Add to pan with all remaining ingredients.
6.
Bring to boil, stirring, then simmer over low heat for 20 - 25 minutes until lentils are tender.
