Yakitori

These meat on a stick are great for appetizers or a late night snack.

Ingredients

/4 c. Soy sauce

tbsp Sugar

ea. Garlic clove, pressed (optional)
1
lb Boneless chicken thigh
8
ea. Bamboo skewers
Vegetables
1-2
ea. Green onion, cut into 1-in. pieces
1
ea. Small red bell pepper, large diced
8
ea. Mushrooms, quartered
Directions
1.
In a small sauce pan mix mirin, soy sauce, sugar and garlic together. Bring mixture to a boil. Then lower heat and reduce mixture until thickened and syrupy (liquid should be half of its volume).

Let cool slightly while you are preparing the chicken.
3.
Cut chicken into bite-sized pieces; keeping the skin on is usual in Japan.
4.
Thread chicken onto skewers, alternating with green onions, red bell peppers and mushrooms.
5.
Grill chicken and vegetable skewers until chicken is done. When chicken is 3/4 cooked, baste chicken on each side and cook skewers through.
