Marshmallow Fluff

Fluffy, spreadable joy!

Ingredients
3
large egg whites
2/3
cup plus 2 tablespoons sugar
3/4
cup light corn syrup
1
tsp pure vanilla extract
Directions
1.
Beat egg whites together until light and frothy. With the mixer running on low, add 2 tbsp sugar and beat until soft peaks form.
2.
In a large saucepan, combine 1/3 cup water, corn syrup and remaining sugar and place over a medium heat until boiling.
3.
Stirring occasionally, boil until the temperature reaches 240F on a candy thermometer.
4.
Remove from heat, and with the mixer on low, pour hot syrup into the bowl.
5.
Beat on high for 6-8 mins, then add vanilla extract.
6.
Beat for a further 2 mins.
7.
Let cool, and store in sealed jars.
