Dorothy's Roast

Best served warm and with a lot of sauce

Ingredients

5 lb brisket
2
red peppers chopped
2
white onions chopped
3
carrots peeled and sliced
salt and pepper to taste
3
tbs olive oil
1
cup dried tomatoes
1/4
cup ketchup
1
cup beef broth
3
tbs brown sugar
1/3
cup chopped parsley
Directions
1.
Preheat oven to 350 degrees. Sprinkle brisket with salt and pepper and place in heavy roasting pan. Saute red peppers and onions with olive oil. When lightly browned, scatter over meat. Add the carrots, parsley and dried tomatoes. Mix remaining ingredients and add enough water until it makes 2 cups. Pour over brisket. Cover tightly and bake for 2 to 2.5 hours.
