Shrimp Tempura

This was my favorite dish to get a sushi restaurants.

Ingredients

large shrimps
corn starch for dusting
oil for deep frying (vegetable oil:sesame oil = 10:1
tempura batter
1
cold large egg
200
mL ice water
1
cup all purpose flour
Directions
1.
Prepare shrimp and make them straight
2.
To deep fry, heat 1 1/2 of the oil to 228-256°F.

Make tempura batter, sift flour into large bowl, add egg into very cold water, whisk the egg mixture vigorously and discard the form on the surface. Slowly pour egg mixture into the flour, mix the batter but do not over mix.(Its okay to leave some lumps in batter. Keep batter cold all times)

Dust corn starch on top of shrimps

Coat the shrimp in batter

Deep fry until golden brown. (Do not crowd fryer with shrimps; leave at least half of oil surface empty)
7.
Transfer cooked shrimp tempura to a wired rack or a plate line with a paper towel to drain excess oil.(Between batched, remove crumbs in oil)
