Lara's Enchalidas

Serve with sour cream.

Ingredients
1
can enchilada sauces of preferred heat
1
lb ground beef
1
can of green chilies
1
medium onion chopped
1
tsp salt
2
tsp pepper
4
cups of shredded cheddar cheese
1
packet of taco seasoning
1
cup water
4
8" flour tortillas
1
9x9 casserole dish with a cover (it might be a tight fit for them)
Directions
1.
Preheat oven to 375 degrees Farenheit
2.
In a 12 inch skillet brown the hamburger, salt, pepper, onion and green chillies, then drain.
3.
Add taco seasoning and water, turn heat to low and simmer for 10 minutes.
4.
Spray the inside of the casserole dish with cooking spray to prevent sticking.
5.
In each tortilla put in meat mixture and then a generous helping of cheese, roll and place in casserole dish. You will use 4-5 tortillas or until the casserole dish is full.
6.
If you have any meat left, pour the can of enchilada sauce in the pan and combine, then pour over the entire casserole dish of rolled tortillas.
7.
On top put on a layer of cheese then cover and place in oven for 20 minutes. Then uncover and cook for another 10 minutes.
